We’ve hit six months full-time in our RV!
I’ve never decorated an RV for Christmas but I gave it a go. My husband even put lights on the front of the rig :-). I will say, it’s not the same as a “sticks and bricks” house but it did help me get in the Holiday spirit!
Our Arizona weather has…
been beautiful, 40’s at night 70’s during the day. Wickenburg AZ (where we currently are staying) really gets into the Holiday spirit with the decorations downtown. Everything is cowboy Christmas around here and the ropers are piling in, horse trailers everywhere.
Heading back to Texas…
We will be heading back to Texas for Christmas with our family and I heard it snowed in Austin! We can’t wait to see everyone and the cool thing is we take our “house” with us so there’s virtually no packing other than getting the rig ready to hit the road.
We often get asked why we decided to sell our house and go full-time. That’s a pretty easy answer, freedom and memories. We wanted less “stuff” and more memories and we wanted to be debt free. Really, when you think about it, are you going to cherish the stuff or the memories? How hard we work to accumulate stuff and now as we are aging we are releasing more and more of it. It’s like we’ve come full circle (hopefully not to diapers again 🙂
My RV has a kitchen island so I have room to cook nice meals. I love baking for the Holidays but I’m gluten free so it’s new territory to find recipes for baked goods. My goal has been to try new recipes that are gluten free. So far I’ve tried Pumpkin Bars, Blueberry Muffins and Biscuits. They all have been good but the Pumpkin Bars got rave revues at Thanksgiving so I thought I would share that recipe for you to try if your gluten free or considering that dietary change.
