We have hit the road again in our RV, first stop Branson Missouri! We have never been here before and are exploring the area for three days before moving further north. Our final destination in Missouri is the state fairgrounds. I’ll be speaking for the largest RV club in the nation at their 56th Escapade gathering!
We will be streaming my talk “live” on Facebook next Wednesday at 1pm CST so stay tuned for an hour of nutrition info to help you be younger next year (who doesn’t want that??).
Our original plan was to head West into Colorado when we were done in Sedalia, but alas, plans must change. We have all our doctors in the Georgetown Texas area (GP’s, Dentist, Eye doctor’s) and Ed could not get an appointment any earlier than June 13th with one of them, so back to Texas we will come for a couple weeks, THEN on to Colorado and cooler weather!
It’s definitely starting to heat up and I’m pull out my grilling and salad recipes for dinner ideas to keep the rig cool. Here is one of my favorites that includes Watercress. I usually can find this next to the lettuce but sometimes I have to ask the produce guy where it is. Check out all the good stuff Watercress does in your body!
- Prevents Breast Cancer because it’s a great detoxifier of estrogen
- Offers a Rich Supply of Vitamin C
- Boosts Immunity because it’s full of A, C, E, K, B vitamins, calcium, magnesium and potassium
- Lowers Blood Pressure because of the minerals
- Prevents Iron Deficiency (anemia) because of the Iron content
- Helps regulate Thyroid function because of the iodine content
- Promotes Weight Loss because of the alkalinizing effects
Green Gulch Salad
1 bunch of watercress, rinsed and leaves removed from thick stems
1/2 small head of organic red leaf lettuce, washed and broken into small leaves
1/2 small head of organic butter lettuce, washed and broken into small leaves
3 mandarin oranges, peeled and cut into bite size pieces (or large orange)
1/2 cup toasted, slivered almonds or pine nuts
6 oz. of Feta Cheese, crumbled
2 Tablespoons of white wine vinegar
1/2 cup of Extra Virgin Olive Oil
2 teaspoons shallot, minced
6 Tablespoons fresh orange juice (or frozen reconstituted)
1/2 tsp. of Pink Himalayan Salt
Toss watercress, red lettuce and butter lettuce in salad bowl with dressing (may not need all of it, save extra for later use). Top with orange slices, slivered almonds and Feta Cheese. ENJOY!
