Do you remember that John Denver song? Ed and I sang that song while we crossed into Colorado 46 years ago on our first road trip. One of the things that attracted us to each other was the love of mountains, camping and fishing.
Colorado…
For a little over one week we have been in Colorado . We are still in southern Colorado in the town of South Fork at the base of Wolf Creek Pass which is the Continental Divide. To have our truck worked on we have to spend three extra nights near the town of Alamosa . First, a water pump went out, then we picked it up and drove it for one day and the transmission would not shift out of third gear! Thank goodness we were near a Dodge dealer, did not get stranded, and it was all under warranty!
We are going to hang out in Colorado for at least a month. Having lived in Durango for eight years and we enjoy taking our RV up there for a number of years. There is still so much we want to see! One of the unfortunate things this year is the drought in Colorado. It is hot during the day even at 8,000 feet, but of course the nights are in the forties and great sleeping!

Boon-docking…
We have been “boondocking” which means we have no power (generator to re-charge batteries), no water or sewer. Luckily we are self contained and can re-fill water with a pump. The rig has been getting hot inside during the daytime (90’s) so NO cooking inside! For our meals we have been grilling a lot, eating big salads and making lettuce wraps. I love to cook extra on the grill and have it for dinner the next night on a salad. We did salmon and marinated chicken on the grill. To that I add hard boiled eggs, cherry tomatoes, green onions, black olives, celery, avocado and top it all with Feta cheese or Parmesan Cheese! I make my own salad dressing with fresh lemon, fresh herbs (whatever I have), extra virgin olive oil, Dijon mustard, garlic and salt.

I love topping them with Avocado Cream or Salsa.
We will stay in touch when in a place with wi-fi (currently in a laundromat 🙂 but we do love being “un-plugged” for days at a time. We will have no TV for the full three months we are out and we do not miss it! If we are in an RV park and can get to a Red Box we grab a movie for some entertainment. Instead of TV we read LOT’S of books and take LOT’S of walks in the evening! I highly recommend a digital fast occasionally, you would be amazed at the conversations that start and the connections that are made.
